Tag Substitution - Tabs vs Templates

I see we can use tag substitution on a presentation tab to control the nav that is displayed. I would like to be able to control what is displayed in the left/right navs and have various menus based on what category or item list is being displayed within a tab.

How can tags be used within a template to control what is displayed in the nav portlet section?

Any help/examples of someone who is doing it is much appreciated.
