Sourced Partner Category Custom Field

I've got a simple one that I hope I'm just being dumb on!!:o  I'm trying to create a custom field that is sourced by our current list of Partners and then specifically a partner category within that list (such as 'Brokers') - I would like the list to just bring back the partners that have a category of X ('Brokers' in my example)

I cannot find how to do this anywhere, can someone help? I don't have to create a custom record to be able to 'source from' do I?! If I do then how can I create the custom record as I already have a large number of partners with the category field correctly completed? Any help would be greatly appreciated as always!
