Does role restrictions carry over to other user's viewable fields?

We setup a new partner for the company and locked them down to specific things on their role. For example, they don't have the system information tab on records. But when I go to view a record they created, I don't see the system information tab either..

How can I set it up so I can view everything I normally would on records they create but still have them restricted to what I setup?
