Accessing [ Set Preference | Customer ] LANGUAGE Fields Separately, In Custom PDF/HTML Templates

I've the need to use both LANGUAGE fields in a custom Credit Memo PDF/HTML Template.

{entity.language}
returns the customer's language from the transaction record.
What is the User's Set Preference LANGUAGE reference? Is it exposed to developers?
