deleting custom fields for sub form

If I go to transactions -> Purchase order -> New Purchase Order ->
History -> contacts. I have some custom added fields during a demo I would like to remove. I do not see the fields in the under customize.

I was able to go to transactions -> Purchase orders -> list purchase orders -> select a purchase order pending receipt select it. I could then on the purchase order pending receipt go to History -> contacts and I see and can use the customize view button.

How come I do not see the customize view button if I open a Purchase order as new???
