Converting an inventory item to an Assembly Item?

I have an item that was set up as an inventory item, as it was being bought in complete.

Now we are having it made for us, utilizing two bought in components (raw material from one supplier, plus filling/packaging service from a second supplier).

How do I best account for these two inputs, without creating a new assembly item? Can I convert an inventory item to an assembly item without losing my prior history?

Can anyone suggest how best to do this? I have the advanced inventory module.
