Live inventory

Does anyone know how to make inventory live? What I would like to see is items being taken out of inventory as soon as the order is placed online. (providing the order is not cancelled) Unfortunately, we cannot set our options to automatically fulfill when the order is placed because we have to run certain tax reports before our orders are approved. Does anyone know a workaround for this?
