Item Option - I want to uncheck this but can't

Hello,

We do not use the Item Option in our company so I do not want Option field displaying as a field in the column of my opportunity. However when i go to my opportunity form I cannot uncheck the Options field as the check box is greyed out. Does anyone else have this issue and if so how did you resovle it.
