Query on Free-From Text field produces unexpected results

I'm extracting data from some custom Free_Form Text fields.
Some characters return strange results, for example "<" produces "<" and ">" produces ">". There are other characters that are translated to something else.
I'm trying to figure out how to get the original text of "<" instead of "<".
