Setting Cost for an item as I add it to a Sales Order.

Hello,
I'm creating Sales Orders with Drop Ship Non-Inventory Items For Resale... The cost for those items change from order to order. Do I have to update the Item record before adding it to a Sales Order? Or can I just set the cost for that particular item at the Sales Order level?
