Create PDF of custom fields associated with a project/job entity

I am trying to clarify how to create an external PDF document that is composed of standard project entity fields and custom fields (held in a tab against a project) in a PDF document with some standard text. I thought this would be possible via mail merge but NS advise I require scripting to achieve this - any comments?
