What to do when store is down?

So our SCA store has been down twice in the past couple years. Each time it has been site down for at least a couple days which is not a good look for an online business. I was wondering how other people handle this. Posting an error page and taking orders by phone is one way but I was wondering what else is possible. We found out due to a couple of cases we have open just how critical our Google traffic is because while we solve the errors our traffic dropped in a very dramatic way. Ideally we could
