Found a resolution! I've edited the Audience on the Deployment record for script SAS Approval List SU which was set to All Roles. This then prevents the "Review Documents Awaiting Approval" list from being displayed (it doesn't stop the portlet from being available, but does prevent users seeing sensitive information)…

Thanks for testing Angela - unfortunately we need employees to be able to enter Expense Reports and Purchase Orders so I'm not sure this solutions fits this use case.

Thank you Angela and Ayitah. This is the list view when you select any of the transactions in the approval flow. As you can see there is the Memo and Amount fields which could hold sensitive information. Users cannot navigate directly to the transactions from this screen. Below is the portlet.
