Using Field Tags in the Send Email Action

Has anyone every used Field Tags from Workflow? When I try to use them the emails include the actual tag text rather than parsing the field values from the Record. I am using a custom record type if that makes any difference. Do I have to turn something one? Doesn't say so in the docs:
