Workflow Action Based on Day of Week

I have a workflow that sends out a follow up email 21 days after a Sales Order status goes to fulfilled. I'd prefer that this email not get sent out on Saturday or Sunday when the "sending" sales rep is not available.

I was thinking I could put a state in which looks at today's date, if Today = Saturday delay 2 days before transitioning to the next state. If today = Sunday wait one day, If Today is any other day transition right away. I can't see a way to grab today from the visual builder, I was wondering if this is possibly with a formula potentially?
