Matrix Item Selection Script Help

Has anyone figured out how to get the value for a matrix option after the customer selects it?  I'm trying to populate a secondary record before the item is added to the cart and need to get a handle on what options were selected.  "Standard" js isn't cutting it, so I'm guessing there's some kind of tag or api involved.
Example - If I have a matrix dropdown selection of available colors, how do I get the value Red, Blue or Green?
