Mass Update on custom fields

I'm confused on the how/why of custom fields showing up in mass update forms? Seems there is no rhyme or reason. Seems I add fieds and some of them show up and others do not. Does anyone know? Is there something I need to set to allow a custom field to show up in a mass update.

IMO, these tend to be the ones we want to mass update the most. We add a new custom field to track certain information and we need to go back to all the existing records to update them, but the field is not available to set in the mass update form.
