How do I change the default country in "address"?

I have "US Outlying islands" set as the default value for all addresses when we create new leads/prospects/customers/contacts.  I need this to be "United Kingdom (GB)".

I seem to be able to change many things from the "customise" menu from the forms, but not the address settings.

How can I set the default to "United Kindgom (GB)"?  It will save our guys lots of time.
