Security for Custom field List

Hi,

I have added a new CRM field which shows in Tasks and is supported by a custom List.

At the moment everyone can add to the List via "new".  I have made myself the list owner but that did not help.  How do I lock this down so that only I (an administrator) can add or amend the list.
