Creating a list of countries and also cities

What I'd like exists on the contact record already where you have a list of countries in a drop down and when you select a country the next field gives you a list of cities in that country. I'd like to be able to have these 2 fields on the project record and have the 2nd one filter according to what was selected in the 1st one - I've used filtering a little bit before but normally the filtering occurs when the record is loaded not when you select a value from one drop down on the record.
