Formula for time and specific day of week

Using a saved search, I would like to get a listing of all sales orders keyed in after 5p M-F.  I would also like to get a listing of all sales orders keyed in between 10-3 on Saturdays.  Using the System notes: date field how do i parse out the time and then how do i limit it to certain days of the week - M-F?
