Course Roster Search

Here is my situation:

We offer courses that people sign up for online.  They either pay with a credit card and the Sales Order goes to a Cash Sale or they have an account with us and the Sales Order goes to an Invoice.  As soon as they place the order, we fulfill it and send them the course information.  The problem is that a few people will cancel before the course starts and so we put in a return authorization and refund them their money.  I need to be able to make a course roster that shows everyone who has ordered the course
