Help with Sales Order import from 3rd party Cart using web services

Help! We have a need to import sales data from a 3rd party custom cart.  I know we'll end up using web services, but not at first since we have the small business version which does not allow for the use of web services.  Maybe we would switch sooner if I understood web services better.

Before we're able to switch to the full NetSuite version with Web services, is there a way to determine which fields would need to be present to import the data via web services?   We have a new shopping cart vendor (Netsuite unfortunately wont work for our situation) and I want to make sure the new cart has all the data export capabilities that we would need in order to import the data to NetSuite via the web services.  Thanks in advance to anyone who can help.
