Ability to Ship via Customer's Freight Account

Hi,

I've tried searching threads for this, but cannot seem to find an entry (which I find hard to believe)...

What is the best way to set up a default shipping method for a customer, that is their own freight account?  I'm guessing there is a way of using Custom Fields and a Shipping Item called "Customer Freight Account", but I want to be sure that the Customer will be able to edit the Freight Company and Account Number in the Customer Centre.

Is anyone else doing this kind of thing and has any wonderful suggestions?

Thanks in advance for any brainstorms.  Nothing but fine mild days in this brain of late!
