Refunding a Line Item when Sale has been Billed...

I'm wondering the best practice way to modify a sales order (and credit for the removed items)

I find that i'm able to refund from within a cash sale, but it doesn't remove the items from the order.... Although this may be because in this case I entered the QTY of a line item...

Any help would be great
