'Deliver By' Date on Sales Order

Hi, has anyone found a way to put a purchase order 'Deliver By' date onto the item column on a sales order? We have a vast range of products and some items are unfortunately out of stock at some point. We would like our sales reps to be able to tell our clients the due date of an item if it is out of stock on the fly. The sales reps do not have access to the item details themself thus the reason for this being on the sales order form. Any help would be appreciated.
