Promotion Code

What is the best way to EXCLUDE an entire category or manufacturer for a specific promotion?  Currently from the way I see things is that you can select specific products but cannot exclude them in bulk such as a specific category or manufacturer. 

For instance, we have a specific category of products that we cannot offer a specific discount since the markup on that category is lousy.  Is there a way to exclude it without having to do it manually one by one?
