opportunity statuses

Can an Administrator customize field id:  entitystatus?  The status field on the opportunity transaction.  I would like to limit the options or provide my own options with my own weightings.  Seems like there should be a page in which the list of opportunity statuses could be assigned whatever weighting we want and some defaults could be marked inactive but I haven't found it.

Please assist.  I don't want to create a custom record.

If there isn't such an option, how about adding a warning message when certain less desirable opportunity statuses are selected.  probably means adding a script right?
