Use Service Items type for man hours in Sales Transactions?

Is anyone having to sell man hours as well as inventory items in a Sales transactions?

Would you use Non-inventory for sale for man hours eg:  1 hour labour, 2 hours labour, 3 hours labour
or use Service Item ? Pros and cons?
Not sure if I want to track time at this stage for the man hours but want to link it to some sort of cost to evaluate profitability in the future.
