customer record email address

this has been something I've noticed for 2 years but never asked here.  When I change a customer's email address on their customer record, and then email them say, a copy of their sales order, the email still goes to the old email address.  I look at the customer record and it has the new email address, and I don't see anywhere else where the old email address is listed.
