Updating Ship to Address

I am trying to update the Ship to Address on a Sales Order in a Before Submit function in a Server Script.

Updating the 'shipaddress' field works fine, but when I try to update the individual fields e.g. 'shipaddress1', 'shipaddress2' they are not updated.

I want to keep the values of the individual fields consistent with the shipaddress field.

Any ideas what the problem might be?
