Dynamic Categories for Retail Site

I am currently in the midst of trying to revamp our web store navigation functionality. We sell arts/crafts-type items retail so category-browsing is especially important for our site... people must enjoy browsing on the site if we want to be successful.

We want to employ a type of hierarchy... WITHOUT making 1200 categories with 10 subcategories each. 

For example, say the customer is looking at our necklace category... we want them to be able to further narrow the search, say, by things like "color", "price", "medium", etc.  If they decide to sort my medium, and are now looking at "glass necklaces", they should be able to click directly to things like "glass bracelets", "all glass jewelry", "glass earrings", "ceramic necklaces"...
