Identifying a new role when given to an employee.

How can I validate roles when saving an employee?

I am trying to send an email to a role "owner" when a certain role has been assigned to an employee. (eg. If a sales role is given to employee Y then send an email to the Sales Director).

I have a custom record that has roles and an associated director, now I just need to pick up the role as it is saved to perform the lookup. I can't find anything online to help me with this and would appreciate any help.
