Inserting default text in field

I need to know how to have NS insert some default text in a required field. Specifically, when one of our receptionists creates a new case, there is a required field called "Title" (which we have displayed as "Subject"). I need to have NS insert some default text into that field when the case is created. Any suggestions? Thanks!
