Custom quick add portlet

Hi peeps, spent much of the day on this in vain and now turn to you desperate for some guidance!

I have a simple custom record consisting of only a few fields. Of relevance to my problem are:

List1 - A List/Record of categories
List2 - A List/Record of sub categories. This field has its source list property set to List1 so that its contents change depending on what is currently selected in List1.

This is similar to how a 'Country' and 'State' setup would work. Ideally the State list would only show those that are relevant to the currently selected Country.
