restrict access/operations on custom lists

I just created a custom record with a bunch of List/Record fields.  The List/Record fields are all using different custom lists.

When I switch my role to one of my lackies and inspect the new record I can add new entries to the custom lists.  Bad.

Do I need to convert to custom record to setup permissions?  Hope not.
