Start Date and Ship Date on External Sales Order

If I show the Start Date field on the external sales order form, why doesn't it show after the form is saved? I don't see a way to customize to show it both when entering the form and saving the form - we have a client that uses the field as a requested delivery date, and their customers like to refer back to this date when they view their orders in the Customer Center.

Likewise, the Ship Date shows on the form after it is saved - I don't see a way to customize the form so that this doesn't show?
