Advanced PDF/HTML Templates Title Property

The title of the record, eg ${record.title}, is behaving funny. I took an old Custom Form, which had the title assigned to it "Sales Receipt" instead of Cash Sale, and converted it to use Advanced Templates instead of Basic.

Well, what happens is that when I hit Save and Print, the PDF reads "Sales Receipt" - if, however, I hit the Print button on the Cash Sale, it reads "Cash Sale" - is there any explanation for this behavior? How can I edit the title, if not by overriding the text itself on the PDF template?
