results column choices incomplete in saved item search

Why are all item fields not available as results (columns) in a saved item search?  This happens every now and then -- someone will try to add a new column to their item list view, and the field they want to display is not available in the results (columns) drop-down list.

These are not custom fields we're looking for -- I understand how to make custom fields available in list view -- these would be standard, NS item fields. For example, today we are trying to access "Country of Manufacture" and cannot find it.
