Saved Search Emails

This is more a curious post than a problem. Has anyone noticed that when sending emails from saved searches, you can seemingly put anything in the "From" field? I've frequently sent emails out from something like <alerts@mycompany.com> which is an email address that doesn't even exist.

Could someone theoretically use this to spoof email addresses?
