Limit the values in a Saved Search's Available Filter List to a subset?

How can I limit the values listed in an Available Filter (list field) on a saved search?

Let say I add the State/Province list field to a Customer Saved Search's Available Filter, how can I limit the list to just US States?

Or, another example, how can I limit the Customer (Name) list field to just "Customers" and exclude Leads and Prospects?
