Understanding Subscriptions vs. the Unsubscribe checkbox

Hello, I have some questions regarding the new v2007 subscriptions.

If a person in pre v2007 was unsubscribed, the box is still checked as unsubscribed in v2007 logically enough, however, NS says that they ARE subscribed to all of the various subscriptions. So which is it? Are they subscribed or not?

Also, it appears that once an entity is created, it is not possible for the admin to either subscribe or unsubscribe them from the various subscriptions. Is that really true? I have to make sure that is all correct before hitting 'save' the first time on a new entity?
