Changes to Value Lists in Custom Fields

I don't trust OpenAir customer support, so I'm hoping I can get some trustworthy advice here.

In a custom field value list, is it safe to re-order the items in the list (e.g., sort them alphabetically) without causing any problems for data already in my database?

If I edit a value in a value list (e.g., change "Foo" to "FooBar"), is that change reflected in existing data in my database?  If not, is there anyway to update existing data to reflect the change I want to make?
