Controling Update Fields

When we preform an update, we need to be careful, because data where fields are missing will be overwritten. In the UI there is three options when updating:

+ Add to existing data
+ Update and add to existing data and DO NOT overwrite missing fields
+ Update and add to existing data and OVERWRITE missing fields

Can I control this with the WS somehow when I perform an update?
