Converting SiteBuilder Categories to SCA Facets

Curious if anyone has a "best practice" for converting their traditional product Categories into SCA Facets.

In our Sandbox, we've created Custom Item Fields that correspond with each branch in our SiteBuilder Category tree and have populated the data on each Item record.

Now, however, I'm unclear on how/if we can use the data from each of those Custom Fields as a Facet. I am unable to access Custom Fields, for example, in Setup -> SuiteCommerce Advanced -> Set Up Website -> Search Index -> Facet Fields.

Can someone explain how to migrate from Categories to Facets? (NOTE: We're working with Elbrus, if that helps.)
