Sessions timing out

Our staff have been getting random timeouts all afternoon while they have been working - one of our accounts staff just lost a whole page of journal entries and our sales team have had to re-enter a few sales orders.

What would be causing this?  There aren't any long periods of inactivity (it's happening during periods of heavy use) and our staff are wasting time redoing things because of the flaky service.
