Need EDI Time Stamp on Sales Order

newbie here, is there a way to output the EDI Time Stamp (not the Sales Order time stamp passed by the retailer)? we are seeing inconsistent lags from the EDI orders causing some apparent processing delays, but put our finger on whether there is in fact a delay on orders coming through.
