Workflow based off of Column field?

I'm looking to make a workflow off of a Sales order.

The scenario:

Sales Rep adds an item not in stock to a Sales Order.  The column "Create PO" shows "Drop Ship Special Order".  We are finding that our sales people are mis-clicking the special order field for flow-thru items.

I want to create a Work Order that verifies via a pop-up box when the Sales Rep saves the SO or possibly a verification box when they click the Special Order, something along the lines "Are you sure you want to Special Order this?"

I can't seem to find the "Create PO" field in the Workflow manager to trigger this?
