Can employee fields in a drop down display differently to employee ID unique field?

We have employee records which use 'employeeID' as a unique identifier.
The company settings are such that this field is displayed as LastnameF (i.e. Last name, first initial).
For a different record type (project, sales orders,etc), the end user wants to be able to select from the set of all active employees for a particular field.
When making the selection from a drop down, they don't want to scroll through the list of employee ids.
Instead, they want to be able to search on and/or scroll through a list which shows the employee name in the format: 'First name Last name'.
