Issuing Credit Memo's

When issuing a credit memo for incorrect pricing on an invoice, it places the item back in stock. Is the only way to do this is issue an RMA and then refund? SuiteAnswers tells me to set up a fake item for Other Charge For Sale, but we want credit tied back to the product category. How does everyone else handle these situations?
